Pumpkin Pie Smoothie

This Pumpkin Pie Smoothie is a healthy way to start the day during fall season. Pumpkin is high in vitamins and minerals while being low in calories. In addition to beta carotene, pumpkin offer vitaminc C, E, iron, and folate – all of which strengthen your immune system.

More pumpkin in your diet can help your immune cell work better to ward off germs and speed healing when you get a wound. Potassium and fiber in pumpkin have been linked to heart and gut benefits. 

Pumpkin is very versatile and easy to add to your diet in both sweet and savory dishes like my Chai Crumble Muffins. 

This Pumpkin Pie Smoothie is balanced and nutrient dense breakfast feeding the good gut bacteria and keeping you energized all morning.

Ingredients

  • 1/2 cup white yogurt like goat or sheep, for a dairy-free use unsweetened coconut yogurt.
  • 1-2 scoops Collagen Peptides
  • 1/2 cup organic pumpkin puree
  • 1/2 prevously frozen banana
  • 1 date, pitted
  • 1/4 cup walnuts
  • 1/4 cup frozen cauliflower rice or ice
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened almond milk or other plant-based milk of your choice

Directions

  1. Place all ingredients in a high-powdered blender or nutribullet and blend on high until smooth and fluffy, adding more water or ice cubes if desired.

  2. Optional, sprinkle with hemp seeds on top before serving.
