Hi, My name is Jarka, and I am behind all Jarka’s Healing Kitchen has to offer. I grew up in the Czech Republic and have been living in NYC for the past 20 years. I am in my 40s and I am a mom to a teenage boy.
From an early age, I loved baking and helping my mom in the kitchen. I taught myself how to cook when I got married and found it just as enjoyable. As I am always on the run, I like to keep recipes quick, easy (for the most part), delicious, and most importantly – healthy!
I love spending time in nature. I also love yoga and all kinds of seasonal outdoor activities like hiking, biking, swimming, skiing, or ice skating. Before my healing journey, activities I loved were difficult to enjoy due to a lack of energy.
My Journey to Reverse Dangerous Inflammation
Bloating and fatigue are so common among women that they don’t think it’s a big problem. I have struggled for years with digestive issues as perhaps some of you have as well. I didn’t realize this bloating and fatigue was a foretaste of more serious and devastating things to come.
Inflammation is dangerous and for me what that looked like was IBS (Irritable Bowel Syndrome), which progressed to achy joints, brain fog, fatigue, and later on into going blind in one eye due to Optic Neuritis – ON (Inflammation of Optic Nerve). I was then diagnosed with RR MS (Remitting Relapsing Multiple Sclerosis). It was terrifying to lose my sight and be given a diagnosis of MS.
I was started on medication, but the side effects were not at all pleasant and I was looking for an alternative. I started to change my lifestyle and noticed some improvements, but I still had persistent digestive issues and a repeat of my Optic Neuritis. I started to dive into this more deeply. I went gluten-free and lived healthily, but that alone wasn’t working for me. I continued to research, I continued to find out my own approach, and I discovered very important details from a nutrition and lifestyle perspective that made all the difference. Slowly but surely my digestion improved, I regained my energy, my joint pain went away, and my vision was restored.
I now feel better than I did in my 30’s! My poor gut health, which I thought was only causing bloating and fatigue, was actually at the root of all this dangerous inflammation. A healthy gut is critical to preventing toxic waste, bacteria, and undigested food particles from entering the bloodstream and causing inflammation. Left unchecked an unhealthy gut contributes to autoimmune diseases and inflammation in the body including achy joints or even plaque-filled arteries!
