Keto Reuben Wraps are easy to assemble, filling, healthy, and delicious!
I made two versions of them:
One is vegan, made with sauerkraut, roasted almonds, and sautéed beets.
The other one is more traditional made with sauerkraut, meat, and cheese.
Both are wrapped in a pre-boiled cabbage leaves. If you want your mouth to be watering even more dip them in Dijon mustard.

Ingredients
For Vegan wraps:
- 3 cabbage leaves
- 1 cup sauerkraut
- 6 slices sautéed red beet
- 1 cup roasted blanched almonds
- 1/4 cup Dijon mustard for dipping
For Meat wraps:
- 3 cabbage leaves
- 1 cup sauerkraut
- 6 slices cooked meat of your choice
- 1 cup compliant grated cheese
- 1/4 cup Dijon mustard for dipping
Directions
- In a large pot, boil 4 cups of water. Using tongs, dip each cabbage leaf in water for 30 seconds and place on a paper towel lined plate to dry.
- Place desired amount of sauerkraut into the center of a cabbage leaf. Top with 3 slices of previously sautéed red beet, or meat and a spoonful of roasted and crumbled almonds, or cheese.
- Roll burrito-style into a small package. Serve with Dijon Mustard for dipping.
