There’s something incredibly comforting about a slice of cake that feels both indulgent and nourishing at the same time. It’s a rare treat—one that satisfies a sweet tooth without leaving you feeling weighed down. This cake, with its rich blend of almond flour, ground walnuts, and warm spices like cinnamon, is exactly that kind of dessert. It’s grain-free, light, and yet packed with so much flavor that every bite feels like a warm hug.

I first discovered this cake during a time when I was looking for a healthier way to enjoy my favorite baked goods. After some trial and error, I stumbled upon this recipe, which struck the perfect balance between indulgence and nourishment. With the nuttiness of ground walnuts and the soft crumb texture from almond flour, it quickly became a staple in my kitchen.

This cake is versatile enough to enjoy on its own, but when topped with a light and fluffy cream cheese frosting and stacked in layers, it transforms into something extraordinary. Whether it’s for a special occasion or just because, it has this magical way of making any moment feel special.

Walnut Coffee Cake with Optional Cream Cheese Frosting (grain-free, sugar-free)

Ingredients

Serves: 8-10 slices
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes

For the cake:

For the frosting (optional):

    • ¾ cup organic heavy whipping cream
    • 8 oz organic cream cheese, softened to room temperature
    • 1 tsp vanilla extract
    • ½ cup powdered sweetener (such as Swerve)

Directions

1. Preheat the oven:

  • Preheat your oven to 350°F (175°C). Prepare two 5″ x 9″ bread loaf pans by greasing them with softened butter and dusting with almond flour. This will help the cakes slide out easily once baked and give them a nice, subtle crust. If you are not using frosting, you can bake the cake in one pan and adjust the baking time. 

2. Prepare the dry ingredients:

  • In a large mixing bowl, whisk together the almond flour, arrowroot starch, coconut flour, tapioca starch, granulated sweetener, ground walnuts, baking powder, cinnamon, and salt. Make sure everything is evenly mixed to ensure a smooth batter.

3. Combine the wet ingredients:

  • In a separate bowl, whisk together the eggs, buttermilk, and melted butter. The buttermilk helps keep the cake moist and adds a tangy richness that balances out the sweetness and spice.

4. Mix the wet and dry ingredients:

  • Gradually whisk the wet ingredients into the dry ingredients. Stir until the batter is smooth and well combined. The mixture should be thick and slightly pourable.

5. Bake the cakes:

  • Divide the batter evenly between the two prepared loaf pans, spreading it out evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center of each loaf comes out clean. The tops should be golden and slightly cracked.

6. Make the frosting (optional):

  • While the cakes are baking, prepare the frosting. In a medium bowl, beat the heavy whipping cream until soft peaks form. Add the cream cheese, vanilla extract, and powdered sweetener, and continue beating until the frosting is smooth and fluffy. Place the frosting in the fridge to chill while the cakes cool.

7.  Layer the cakes:

  • Allow the cakes to cool completely in the pans. Once cool, carefully remove them from the pans. Place one loaf on a serving plate or platter and spread a generous layer of the cream cheese frosting on top.
  • Place the second loaf on top of the frosted loaf, creating a stacked, layered effect. Spread another layer of frosting over the top of the second loaf to cover the entire cake.
  • If desired, you can also frost the sides of the cake for a more decadent finish.
