These Gluten-Free Chocolate Chip Cookies are so delicious that nobody will recognize they are not made with conventional ingredients. They are also sugar-free, and nut-free, and can be made dairy-free as well! They are soft and chewy with pockets of melty dark chocolate. You might wonder what the secret ingredients are. Gluten-Free Soft Baked Chocolate Chip Cookies (with a dairy-free option)

Ingredients

For approximately 24 cookies:

  1. Preheat the oven to 375 °F. Line a baking pan with parchment paper and set aside.
  2. In a separate bowl mix the flour, baking soda, salt, baking powder, and xanthan gum. Set aside.
  3. Cream together softened butter or shortening with the sweeteners until combined. 
  4. Beat in eggs and vanilla until fluffy.
  5. Mix in the dry ingredients slowly, until well combined. 
  6. Add chocolate chips and mix well.
  7.  Use a cookie scoop to make balls or use a tablespoon and roll the balls and place them evenly spaced on your prepared cookie sheets. You can press the balls a little if you want the cookies to be flatter.
  8. Bake in a preheated oven for approximately 10 minutes. Take them out when they are just starting to turn brown.
  9. Let them sit on the baking pan for 2 minutes before removing them to the cooling rack. They will firm up as they cool and even stay soft and chewy for days afterward!
